lamb.

i took lamb loin chops (one to two per person), dusted them with black pepper, rubbed with thyme, wrapped them in a thick slice of peppercorn encrusted bacon, and wedged in a large shaving of lemon rind. i cooked this on med-hi heat, flipping occasionally, till the bacon browned. then i took about an 1/8 cup of water, threw it in and covered it. it then cooked for about 7 or 8 minutes.


carrots.

this is one of my favorite dishes. easy to prepare. easy to cook. and god damn tasty to eat. i minced about 6 cloves of garlic and an equal amount of peeled ginger. pete peeled and thinly sliced the carrots at a 45 degree angle. then we tossed the ginger, garlic, carrots and some olive oil into a large pan. it's good to have as many carrots touching the pan as possible. cooked these over medium heat till they were brown. mmm, caramelized carrots. oh we cooked a whole bag of carrots and ate them all. they are that good.


mustard greens.

i like to cook these up real simple like. i start by taking the whole bundle and slicing from the stalk up. i slice the stalks thinner and the leafy end i slice wider. i roughly chop a few cloves of garlic and throw it all in a pot with olive oil. i cover them so they steam. i cook them till the leaves turn dark green and are wilted. tossed in some balsamic vinegar and it's done!


pretty damn tasty, and for the most part, healthy dinner. the carrots take the longest to cook, about 30 minutes, so start those first.
